Welcome to our section dedicated to Production, the beating heart of our oil mill, where tradition meets innovation to create extra virgin olive oil of the highest quality. Every year, between October and November, the olives reach the right degree of ripeness: they are then harvested and taken to the mill to be pressed within 12/24 hours. From here, our company offers two types of processes, both continuous cycle:

A first Mori-Tem plant, inaugurated in 2017, equipped with a knife crusher, two kneading machines, and a two-phase decanter for separating the oil from the pomace. A real gem, a perfect combination of technology and respect for the product. It operates without any contact with the outside air, thus preserving the organoleptic properties and nutritional benefits of the olives to the maximum.

An important development for our oil mill was the introduction, in October 2024, of the New Plant designed by F.lli Ferri in collaboration with Alpha Laval. This true technological excellence replaced our historic traditional system with stone mills and presses, which had proudly served us since 2003. This evolution was necessary to improve production hygiene.

Larger in size, it is equipped with: a hammer crusher for crushing the olives, a chiller module for cooling the olive paste, 4 stainless steel kneading machines with a controlled temperature below 27°C to ensure maximum efficiency and quality. Finally, a two-phase decanter for separating the oil from the pomace (residual pulp and water).

Both facilities were chosen and designed with a single goal in mind: to offer extra virgin olive oil that reflects the highest quality standards. Every stage of the production process is designed to respect the unique characteristics of the olives, ensuring a product that encapsulates all the flavor and authenticity of our land.
