Oil obtained by selecting only the best olives from local producers at the right stage of ripeness. These are processed in our oil mill within 24 to 48 hours in order to maintain their quality. The olives are pressed using a stainless steel knife press, while extraction is carried out using a two-phase extractor of the latest Mori-tem generation at a temperature of less than 27°C in the absence of oxygen. Medium fruity oil with a balanced bitter and spicy aftertaste with hints of almond and artichoke.
