Sour cherry wine
Sour cherry wine is a typical product of the Marche region. It is an aromatised wine already known in the 15th century; it is composed of wine and sour cherry syrup, which is obtained by fermenting wild cherries (Prunus Cerasus) with sugar, exposed to the sun in glass containers for at least 45 days, repeatedly ‘stirred’ by hand. The flavour is intense but delicate, sweet and harmonious, the aftertaste moderately bitter. Uncork 10 minutes before serving, at 14-18 °C.
